- In another bowl, whisk together buttermilk, eggs, and melted butter until combined.
- Pour wet ingredients into dry ingredients; stir gently until just combined.
- Fold in sweet corn, diced red bell pepper, and cheddar cheese.
- Scoop batter onto prepared baking sheet, leaving space between each.
- Bake for 15-18 minutes until golden brown and firm to the touch.
- Let cool slightly, drizzle with honey, and garnish with fresh herbs before serving.
