Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  3. In another bowl, whisk together buttermilk, eggs, and melted butter until combined.
  4. Pour wet ingredients into dry ingredients; stir gently until just combined.
  5. Fold in sweet corn, diced red bell pepper, and cheddar cheese.
  6. Scoop batter onto prepared baking sheet, leaving space between each.
  7. Bake for 15-18 minutes until golden brown and firm to the touch.
  8. Let cool slightly, drizzle with honey, and garnish with fresh herbs before serving.
