"Southwest Chicken Cobb Salad with Chipotle Lime Dressing Delights!"

Ingredients
  

  • 2 cups cooked chicken diced
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1 cup black beans rinsed and drained
  • 1 cup corn canned or frozen, thawed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil for dressing
  • 2 tablespoons lime juice freshly squeezed, for dressing
  • 1 tablespoon honey for dressing
  • 1 teaspoon chipotle powder for dressing
  • 1/2 teaspoon garlic powder for dressing
  • Salt and pepper to taste for dressing

Method
 

  1. In a large bowl, combine the chopped romaine lettuce, diced chicken, cherry tomatoes, avocado, black beans, corn, feta cheese, red onion, and cilantro. Toss gently to mix all ingredients evenly.
  2. In a separate small bowl, whisk together the olive oil, lime juice, honey, chipotle powder, garlic powder, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients with the dressing.
  4. Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.
