  1. Begin by patting the chicken breasts dry with paper towels. Season both sides with smoked paprika, ground cumin, salt, and black pepper. Allow the chicken to sit for about 10 minutes.
  2. In a large, oven-safe skillet, heat a tablespoon of oil over medium-high heat. Add the seasoned chicken breasts and sear for about 6-7 minutes on each side until golden brown.
  3. Reduce heat to medium and add minced garlic. Sauté for about 30 seconds. Add diced Hatch chilies, heavy cream, honey, and chicken broth. Stir well, scraping up any browned bits from the bottom.
  4. Preheat your oven to 375°F (190°C). Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. Once baked, remove the skillet and let it rest for about 5 minutes. Garnish with freshly chopped cilantro before serving.
