  • 1 jalapeño pepper seeded and minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey optional
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the cubed watermelon, diced cucumber, chopped red onion, cilantro, and minced jalapeño.
  2. In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
  3. Pour the dressing over the watermelon mixture and gently toss to combine.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
