  • 12 ounces Pasta (penne or fusilli)
  • 10 ounces Fresh spinach Well-drained
  • 15 ounces Ricotta cheese Whole milk
  • 8 ounces Mozzarella cheese Shredded, low-moisture
  • 1 cup Parmesan cheese Grated
  • 2 cups Marinara sauce Store-bought or homemade
  • 2 tablespoons Olive oil
  • 2 cloves Garlic Minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Italian seasoning Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
  2. Cook the pasta in salted boiling water according to package instructions until al dente, about 8-10 minutes.
  3. In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant, then stir in the spinach and cook until just wilted, around 2-3 minutes.
  4. In a mixing bowl, combine ricotta cheese, half of the mozzarella, half of the parmesan, salt, pepper, and optional Italian seasoning. Mix in the wilted spinach.
  5. Layer half of the marinara sauce at the bottom of the baking dish, add half the cooked pasta followed by the ricotta-spinach mixture, spreading it evenly.
  6. Top with the remaining pasta and drizzle the rest of the marinara sauce over the top. Sprinkle the remaining mozzarella and parmesan cheese evenly.
  7. Bake for 20-25 minutes until the top is bubbly and golden brown.
  8. Let it cool for a few minutes before slicing and serving.

Notes

Make sure to drain spinach well to avoid sogginess. Cook pasta just al dente as it will continue cooking in the oven.
