Step-by-Step Instructions
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
- Cook the pasta in salted boiling water according to package instructions until al dente, about 8-10 minutes.
- In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant, then stir in the spinach and cook until just wilted, around 2-3 minutes.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, half of the parmesan, salt, pepper, and optional Italian seasoning. Mix in the wilted spinach.
- Layer half of the marinara sauce at the bottom of the baking dish, add half the cooked pasta followed by the ricotta-spinach mixture, spreading it evenly.
- Top with the remaining pasta and drizzle the rest of the marinara sauce over the top. Sprinkle the remaining mozzarella and parmesan cheese evenly.
- Bake for 20-25 minutes until the top is bubbly and golden brown.
- Let it cool for a few minutes before slicing and serving.
