Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Lightly grease a 9x13 baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, whisk together the soy sauce, Dijon mustard, and apricot preserves.
  4. Add in dehydrated onion, kosher salt, granulated garlic, and crushed red pepper to the sauce mixture.
  5. Coat the chicken thighs thoroughly with the apricot sauce mixture.
  6. Place the coated chicken thighs skin-side down in the greased baking dish. Bake for 20 minutes.
  7. Flip the chicken thighs over and spoon the reserved apricot sauce over each piece. Bake for an additional 25-30 minutes.
  8. Let the chicken rest for a few minutes before serving.
