Step-by-Step Instructions for Sun Dried Tomato Pesto Sauce
  1. Drain oil-packed sun dried tomatoes or soak plain ones in hot water for 20 minutes.
  2. In a food processor, add tomatoes, basil, toasted pine nuts, grated garlic, vegan parmesan or nutritional yeast, and optional oregano. Drizzle in olive oil or reserved soaking water.
  3. Blend on high speed until smooth, adding more olive oil or tomato water if needed for desired consistency.
  4. Taste and adjust with sea salt as necessary.
  5. Transfer to a clean jar and refrigerate until ready to use.
