Teriyaki Sauce
  • 80 ml Soy Sauce or Tamari Tamari for gluten-free
  • 30 ml Honey or Brown Sugar Maple syrup works as a substitute
  • 15 ml Rice Vinegar Balances flavors
  • 15 ml Sesame Oil Adds a nutty aroma
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated Dried ginger as substitute
  • 1 tbsp Cornstarch Mixed with 2 tbsp water for thickening
Rice Layer
  • 225 g Cooked Jasmine Rice or Sushi Rice Brown rice can be used
  • 15 ml Additional Rice Vinegar For extra zing
  • 5 ml Sesame Oil
  • 1 pinch Salt
Avocado Layer
  • 2 pieces Ripe Avocados, mashed Brighten with citrus juice
  • 15 ml Citrus Juice Prevents browning
  • Salt To taste
  • Black Pepper To taste
Garnish
  • Sesame Seeds For crunch
  • Chopped Green Onions For freshness
  • Pickled Ginger Optional

Method
 

Instructions
  1. In a medium bowl, whisk together the teriyaki sauce ingredients until smooth.
  2. Heat a skillet, cook chicken until golden brown, then pour the teriyaki sauce over the chicken and simmer until cooked through.
  3. In a bowl, combine rice, additional rice vinegar, sesame oil, and salt; mix until coated.
  4. Mash avocados, add citrus juice, and season with salt and pepper.
  5. Using a food ring mold, layer rice, avocado, and sliced chicken to assemble.
  6. Garnish with sesame seeds and green onions, serve with pickled ginger if desired.
