Preheat the oven to 350°F (175°C).
In a large bowl, combine the ground turkey, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form the turkey mixture into 12 small patties.
In a skillet over medium heat, cook the turkey patties for about 5-6 minutes on each side, or until fully cooked and no longer pink in the center.
While the patties are cooking, prepare the sauce by mixing together the mayonnaise, Dijon mustard, honey, and a pinch of salt in a small bowl.
Once the patties are cooked, slice the Hawaiian rolls in half horizontally without separating them.
Place the bottom half of the rolls in a greased baking dish. Spread half of the sauce over the rolls.
Layer the cooked turkey patties on the rolls, followed by the chopped bacon and cheddar cheese slices.
Drizzle the remaining sauce over the cheese, then place the top half of the rolls on.
Brush the melted butter over the top of the rolls and sprinkle with chopped parsley if desired.
Cover the baking dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and the tops are golden brown.
Remove from the oven, let cool for a few minutes, then slice and serve warm.
