Spread the goat cheese evenly on one side of each slice of toasted bread.
On one slice of bread, layer the sliced turkey breast, followed by the arugula or spinach.
Spread the fruit jam over the turkey and greens.
Place the second slice of bread on top, goat cheese side down, to complete the sandwich.
If desired, drizzle olive oil over the sandwich and cut it in half for easier handling.
