  • 4 cups cooked rice using leftover or cooled rice
For the Flavor Base
  • 2 tablespoons vegan butter adds rich flavor
  • 1 medium onion yellow or white onion works great
  • 3 cloves garlic fresh, minced
  • 2 stalks scallions chopped
For the Protein
  • 1 cup vegan ham offers texture and protein
  • 1 block tofu extra firm or smoked recommended
For Vegetables
  • 2 cups other veggies such as peas, carrots, corn
For the Seasoning
  • 2 tablespoons white miso paste for umami flavor
  • 2 tablespoons dark soy sauce adjust to taste
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For Garnishing
  • 1 tablespoon sesame seeds optional
  • 1 sheet nori sheets optional

Method
 

Preparation Steps
  1. If using freshly cooked rice, spread it out on a tray and let it cool for about 10 minutes.
  2. Heat a large skillet or wok over medium-high heat and add vegan butter.
  3. Toss in diced onion, minced garlic, and chopped scallions; sauté for 1 minute.
  4. Stir in vegan ham and tofu along with additional vegetables; reduce heat to medium and sauté for 3 minutes.
  5. Add white miso paste and stir for 1-2 minutes until infused.
  6. Increase heat, add cooled rice, and stir thoroughly; drizzle with dark soy sauce.
  7. Taste and adjust seasoning with salt and pepper; serve garnished with sesame seeds and nori.
