Ingredients
  

  • 4 cups seedless watermelon cubed
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons honey or agave syrup adjust to taste
  • 2 cups sparkling water
  • Ice cubes
  • Lime wedges for garnish

Method
 

  1. In a blender, puree the watermelon cubes until smooth. Strain the puree through a fine mesh sieve into a large pitcher to remove any pulp, if desired.
  2. Add the fresh mint leaves, lime juice, and honey or agave syrup to the watermelon juice. Use a muddler or the back of a spoon to gently press the mint leaves to release their flavor.
  3. Stir in the sparkling water until well combined. Taste and adjust sweetness if necessary.
  4. Fill glasses with ice cubes and pour the watermelon mojito mixture over the ice. Garnish with additional mint leaves and lime wedges.
  5. Serve immediately and enjoy!
