Dough
  • 600-700 g Pizza Dough Store-bought or homemade
Filling
  • 1 cup Ricotta Cheese Can substitute with cottage cheese
  • 2 cups Shredded Mozzarella Fresh mozzarella is recommended
  • 1/2 cup Grated Parmesan Pecorino Romano can be used
  • 1 tbsp Italian Seasoning Dried herbs can be used if unavailable
  • Optional Fillings Pepperoni, sausage, spinach, or mushrooms
Sauce
  • 1 cup Marinara or Pizza Sauce Homemade or store-bought
  • 2 cloves Garlic (minced) Fresh garlic is ideal
Baking and Serving
  • 2 tbsp Olive Oil (for brushing) Melted butter can be used
  • 1/4 cup Flour or Semolina (for dusting) Cornmeal is an alternative

Method
 

Preparation
  1. Preheat the wood-fired oven to 500-550°F (260-290°C). Wait until flames calm.
  2. Divide pizza dough into four balls and roll each into an 8-9 inch circle on a floured surface.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, minced garlic, and Italian seasoning.
  4. Spread sauce on half of each dough circle and add the cheese mixture and any optional fillings.
  5. Fold dough over to seal, crimping edges to ensure filling stays inside.
  6. Transfer calzones to a floured pizza peel and bake for 6-8 minutes, rotating for even browning.
  7. Brush tops with olive oil and allow to cool slightly before serving with marinara.
