Step-by-Step Instructions for XO Fried Rice with Char Siu
  1. In a large skillet, add 1 tablespoon of peanut oil or vegetable oil and heat it over high heat for about 1 minute.
  2. Add the diced yellow onion and char siu pork to the hot skillet, sautéing them for 1-2 minutes.
  3. Stir in the white parts of the green onions, minced ginger, and minced garlic into the skillet. Cook for an additional 30 seconds.
  4. Introduce your day-old leftover rice to the skillet, breaking any clumps apart. Stir constantly for approximately 2 minutes.
  5. Pour in the XO sauce, stirring well to evenly coat every grain.
  6. Push the rice to one side of the skillet, pour in the beaten eggs on the empty side, and let them set for about 1 minute.
  7. Once the eggs are set, scramble them gently and combine them with the fried rice. Add the green onion greens and cook for another 30 seconds.
