Method

  3. Combine cooked quinoa, panko breadcrumbs, smoked paprika, garlic powder, and melted butter or olive oil in a bowl to form the crust mixture.
Cooking
  1. Remove cod from the refrigerator, coat with the quinoa mixture, and place on a lined baking sheet.
  2. Bake for 15-20 minutes until cod flakes easily and crust is golden brown.
  3. Optional: Broil for an additional 2-3 minutes for extra crispiness.
  4. Garnish with freshly chopped parsley and serve with lemon wedges.
